review 1: Not so much an examination of what the average person could be doing to create a more healthy food system, but, instead, a lovely examination of what a chef, as a major buyer of extremely high-quality food, could do to support a healthier food system. The case studies of different farms and communities in the world that are doing what the author feels is right are really nice to examine, even if some of them have been beaten to death.
