review 1: At first, I was not enthusiastic about continuing the book after the first few chapters, but then I realized that I wasn't reading this to be impressed by the writing quality, I was reading it in hopes of being impressed by the actual work done in the kitchen. After finishing the book, I was exhausted by the day I'd just experienced and wanted to know how the next day was going to be managed. I've read many food/cooking memoirs over the past decade- so many, that I've strayed from the subject to different books. Sous Chef has definitely pulled me back into the kitchen and I hope to find many more like this. Fortunately, we are presented with a diagram of a typical restaurant kitchen, a kitchen chain of command chart and a glossary at the end explaining the language of a restaurant kitchen. These people are dedicated, artistic, magical and hard-working. They must be managers, politicians, athletes, teachers and a few become superstars. less
