Here is a really yummy dish that is super quick, and super healthy.
Grate one carrot and put 1 tablespoon or so, of peanuts on top (I added a few almond nuts also). Lightly steam some broccoli. Then for the yummy flavourings – they sound odd, but they really work: pour over a tablespoon of cider vinegar and squeeze half a lime all over, and sprinkle the zest of half a lime over it too. Happy eating a little bit of the rainbow!
