review 1: I love this book. Once I've established a particular dish as a "favorite" I tend to cook it again and again, and eventually get myself into a rut. This book gets me out of the rut by reminding me of all the other flavors I might like to try. Sometimes the switch is just as simple as keeping the cooking technique exactly the same, but substituting a few herbs or spices, which give the dish an entirely new flavor, but with the ease of preparation that I'm used to. This book has no recipes, so it's best used by someone who is already comfortable with various cooking techniques and can use their own experience and judgment to make their own recipes. Although I've certainly done searches to find recipes online when I see an intriguing combination that I'm not sure how to i... moremplement.
review 2: Fantastic. I've owned this book for years and used the flavour reference section quite frequently, but only today did I sit down and read the introductory chapters, which really explain where the flavour combinations listed in the rest of the book come from. I honestly think this book is an essential for anyone who enjoys cooking at home and wants to move beyond following recipes to the letter. Yes, some of the combinations are rather obvious, but as another commenter below me said: it's the combinations that aren't so obvious that make this book fantastic.Also worth noting: it's a decent reference for the aspiring home mixologist as well, since various spirits are included in the list of ingredients. less
