Bake Life: Cookies After Midnight

Welcome to BAKE LIFE! A series of posts combining the two of my favorite things, beer and baking. If you know me personally then you know I co-own a dessert company Liquor Infused Confections (PLUG http://dessertsbylic.com), so baking with booze isn’t new to me. In Bake Life I’ll share the delicious wins, the hilarious fails, and all the nonsense in between. All recipes are created and tested by yours truly and tested by a panel of experts- my boyfriend and our neighbors. I hope you enjoy!

Featured Beer: Tampa Beer Works After Midnight (13% ABV) has flavors of chocolate, cherry, coffee, cinnamon, and vanilla. Words can’t express how amazing this stout is. I will ugly cry if I ever taste another stout better than After Midnight.  It’s the perfect beer for a chocolate infusion.

 

5 oz  semi-sweets or dark chocolate chips

1/4 cup Tampa Beer Works After Midnight (or any delicious stout you like)

1 stick of butter (soften)

1/3 cup granulated sugar

1/3 brown sugar

1 egg

2 tsp vanilla extract

1 5/8 cup flour (1 ½ cup + 2 TBS)

¼ tsp salt

½ tsp baking soda

A playlist- This is KEY! You need music that going to give you a good vibe. Your food tastes better when you’re in a good mood. Facts!

  • Melt chocolate and beer until smooth.

    Ya girl likes to double boil.

  • Spread melted chocolate on parchment lined baking sheet.

    Oh heeeey!

  • Let cool on the counter 4-5 min then store in freezer until ready to add to batter. The chocolate can go in the refrigerator if you don’t plan to make the batter immediately.
  • Cream together butter and both sugars at medium speed, should appear like fluffy sugar butter clouds.   
  • Add flour, baking soda, salt, mix on medium speed until combined.
  • Cover dough in plastic wrap and chill in fridge for 2 hours. If you’re in a hurry you can cut down the “chill time”. The cookies will be a flat, but still delicious. IDEAS TO PASS THE TIME: Eat lunch, pretended to be Omarion in the “Touch” video, give your dog a treat, watch the latest episode of Real Housewives of Orange County (Shannon is a little much this season, am I right?), drink water, clean up that mess you made in the kitchen or put off cleaning your kitchen and text your friend’s about Shannon’s antics this week
  • Pre-heat oven 350°.
  • Remove chocolate from freezer. Gently fold in pieces of chocolate with a stirring paddle. HEADS UP: The chocolate WILL NOT be in a solid piece. 
  • Use a tablespoon (the big one you eat cereal with) or cookie scoop if you’re fancy to scoop batter.  Shape dough as desired. Place cookie dough on parchment paper lined backing sheet.  
  • Slide those lil’ babies into the oven for 17 mins. Cool for 5-10 mins before serving. DAMN GINA!
