I love almost everything citrus. I mean, I could probably drink a gallon of lemonade no questions asked. Hey, we each have our vices. Mine just happen to be of the food and drink variety. When I stumbled upon this recipe I was in serious doubt that something that looked like water could pass my discerning taste test.
I’ll admit, I was wrong. If you love lemonade or tart-ish drinks you’re going to flip for this. Oh and remember how I said I didn’t like diet recipes? Well, this drink is only 77 calories per cup. That’s actually less than a glass of orange juice (no shade)! It just happens to be low calorie. So, if you’re looking to switch out soda for something a smidge healthier, this is it. I can personally tell you that when I have this in my fridge, I won’t drink anything else!
This is so easy to make! If you don’t already have citric acid and lemon extract in your pantry, they can easily be found at your local grocery store. Usually, the citric acid can be found near the canning supplies (like mason jars). Citric acid is a weak acid that occurs naturally in fruits and vegetables and is often used to keep sliced fruits from turning brown (much like lemon juice). Lemon extract can be found in the baking aisle near the vanilla extract. It’s quite different from lemon juice and cannot be substituted. One sniff of the lemon extract and you’ll know the difference.
Citrus Refresher Punch Serves: 20 (cups)
Time: 5 minutes
Calories: 77.3 Ingredients
2 tablespoons citric acid
2 cups sugar
2 tablespoons pure lemon extract
5 quarts water
1. In a large pitcher stir together the citric acid, sugar, lemon extract, and water.
2. Chill and serve.
It really is much better after it’s chilled. One sip, and you’ll be hooked. Now, if you’ll excuse me, I’m off to make my own Citrus Refresher Punch.
