Ok so, I have to admit before baking this today, I have never eaten pecan pie before. It always seemed kinda gross to me.. Brown and slimy.. Ick. But then recently I stumbled across a recipe and after looking it over, I realized that it was, in a nutshell (hehe), just pecans and various types of sugar. So, what’s not to like? So I strapped on my big girl pants and got to work baking my first pie ever! I adapted this recipe from Sally’s Baking Addiction.
I’m really not a big baker, it’s just fall and winter do something to me and I just want the house to smell like cinnamon and vanilla all the time! Maybe I should just get candles.. That’s probably better for all of our waistlines haha! Get ready to loosen your belt and let’s make a pie!
Ingredients:
1 ½ cups of pecans roughly chopped
3 eggs
1 cup of dark corn syrup
½ cup of dark brown sugar
1 ½ teaspoon vanilla
½ teaspoon cinnamon
¼ cup of melted butter
Pinch of salt
** I wasn’t feeling very adventurous about making a pie crust, so I bought a box of Jiffy instant pie crust, it was delicious and easy to use. 10/10 do recommend.
*** If you use unsalted butter you will need ½ teaspoon of salt.
PIE TIME:
- Prepare your crust and pop on the fridge to chill.
- Preheat your oven to 350- I skipped this because I’m on that toaster oven life.
- Whisk eggs, corn syrup, brown sugar, vanilla, cinnamon, melted butter, and salt together.
- Try not to eat the filling, it smells divine.. I know.
- Roll out your pie crust on a well floured surface and pop it into your pie tin.
- Toss your pecans in the bottom of your pie crust in a (mostly) flat layer.
- Pour that heavenly filling over the chopped pecans.
- Pop that bad boy into the oven for 40-50 minutes.
- Check on it half way through (approximately 20 minutes in) to make sure the crust isn’t going to burn. You can put foil over the top at this point if necessary.
- Let your delicious pie rest on a cooling rack when done.
- Sit back and be proud that you just made yourself a pie!
