During the weekend most of us eat out abusing fat and carbs. This is not only a delicious recipe, it’s also a power breakfast you can have at home to start your day with the right foot. You might even feel a little less guilty about missing healthy vegetables, proteins and healthy fats later in the day.
Here is the breakdown of the health benefits:
Red/Purple onions:
They are common and inexpensive. Red and yellow onions are one of the well known sources of quercetin. Quercetin is in both red and yellow onions, a kind of vitamin that searches and collects free radicals. Onions are full of antioxidant properties that help fight cancer cells. They are also anti-fungal, anti-bacterial and anti-inflammatory.
Cremini Mushrooms:
Creminis have been discovered to be at the top of the list, above other exotic mushrooms (like shiitakes) , for their beneficial properties. They are excellent at regulating inflammation in the body, helping especially people that suffer from arthritis. They are great at assisting the cardiovascular system, lowering the risk of possible damage to the aorta. They are also great also at fighting breast cancer. Give some more Creminis, please!
Red Tomatoes:
Excellent source of antioxidants and lycopene. Lycopene is closely related to bone health. They are also good at lowering cholesterol minimizing the risk for heart related problems.
Cilantro: Is a good source of minerals like potassium, calcium, manganese, iron, and magnesium. Also a great source of antioxidants, vitamins and dietary fibers.
Eggs:
Excellent source of protein. Full of vitamin B2, B6 and B12. Also a great source of zinc, iron and copper.

Tip: Use oils that have a high resistance to heat. I use avocado oil from Costco.
