A delicious meal doesn’t have to take a lot of effort, so on a lazy Saturday when the kid and I were spending the afternoon and evening alternating between Hulu, Netflix, and Apple Music, I decided to throw some quick panko chicken in the oven.
Making panko chicken is simple if you use pre-packaged panko crumbs, like the Progresso lemon pepper variety I used. I took Just Bare chicken breast tenders (14oz.), dunked them in egg, covered them with panko crumbs (1 cup), then baked them on a greased cooking sheet for about 20 minutes at 375F. For the last 2 minutes I turned the heat to broil to add a crispier coating.
I served them with a side of steamed broccoli and fresh grated Parmesan cheese.
Quick, easy, delicious, and healthy. Each portion was ~430 calories, 6g fat, and 51g protein.
