A healthy and tasty veggie and barley stew before the Thanksgiving pig-out tomorrow!

3 potatoes, 6 carrots, 3 ribs celery, 1 onion, 8 oz mushrooms, and 1 cup barley in a quart of water seasoned with better than boullion no-beef broth paste, garlic and onion powder.

We served it with Ritz crackers, which are accidentally vegan. It was scrumptious! And for just 2 of us, we only had 1 bowl left over.
