review 1: I believe that the kitchen is the heart of the home, serving love and offering nurturing along with food. However, today's cooks are often pressed for time and stressed over how to serve good, quick meals to please everyone in the family. "The America's Test Kitchen Quick Family Cookbook" is a valuable resource--packed with hundreds of recipes, cooking tips, product recommendations, and colorful food photos. The first chapter, "Getting Started", offers helpful insights into time-saving techniques and kitchen equipment essentials. The final chapter, "The Quick Pantry", provides really helpful information regarding canned foods, convenience foods, fresh foods, and "Test Kitchen Favorites". In-between the first and last chapter, you will find over 700 recipes, including featu... morere pages which offer five super-quick uses for common food products like peanut butter, canned tomatoes, and frozen vegetables. I really like the way the chapters are categorized--groupings like "Salad for Supper", "Eggs for Dinner", "Simple Sides", and "Casserole Favorites" suit me just fine. There is also a chapter for "Vegetarian Mains", and one that is "Kid Friendly". Other chapters cover cooking basics like seafoods, meats, desserts, and more. The recipes are varied and user-friendly both in the cooking techinques and required ingredients. Here's a sampling of recipes which sound delicious and look fabulous: "Prosciutto-Wrapped Asparagus"; "Lemony Chicken and Rice Soup"; "Asian Spinach and Shrimp Salad with Orange-Sesame Dressing"; "Steak Hoagies with Mushrooms, Onions, and Peppers"; "Rustic Farmhouse Chicken Casserole"; "BLT Pasta"; "Turkey Cutlets with Cranberries and Red Wine"; "Sirloin Steaks with Horseradish Mashed Potatoes"; "Honey-Lime Glazed Salmon"; "Skillet Rice and Beans with Corn and Fresh Tomatoes"; "Grilled Tuna Steaks with Bok Choy Slaw"; "Family-Size Omelet with Tomato, Bacon, and Garlic"; "Pressure-Cooker Hearty Beef Stew"; "Crispy Cornflake Pork Chops"; "Creamy Orzo with Peas and Parmesan"; "Simple Cream Scones"; "Goody Goody Bars"; and "Rustic Peach-Ginger Tart". Yes--this is a big book! It does not include the nutritional breakdown for the recipes, which would have almost doubled the size of the book. Use common sense when including "convenience" foods in your cooking, and keep in mind the fat, salt, and sugar content of the product. Food is meant to be a pleasure, not just a necessity, and cooking should be as enjoyable as possible. Meals prepared under duress are hard to digest. review 2: This cookbook is one of the finest I've ever seen. With easy-to-follow recipes, well-documented by photographs, and excellent time-saving suggestions and variations, it is sure to be a staple in our kitchen. Those who watch "America's Test Kitchen" on PBS will be familiar with some of the concepts (like tastings of various ingredients and so on) that lead to recommendations found within the book. I especially appreciate the explanations of what led to certain decisions on "most favorable" ratings. The variations on each recipe are great as well (e.g., making chili with hominy instead of pinto beans, which renders it safe for many people who suffer gout and still allows it to be vegetarian).A particularly useful part of the book is the "quick pantry" section, which makes recommendations for ingredients to keep on-hand (e.g., stewed tomatoes, gardiniera, etc.) that can make preparation for some recipes quite a bit quicker. Highly recommended for busy people who want to do more home cooking (no recipe requires more than 45 minutes, including prep), and cooks both novice and experienced. less
