review 1: I love this cookbook, but mainly for the non-baked recipes, oddly enough. Although I found some of the recipes for baked goods to be very dense, the salads and soups at the end of the book are awesome. The Moroccan bean salad and lentil soup are real crowd-pleasers, even for non-gluten-free or non-vegan folks. Some of the ingredients are difficult to find - like umeboshi paste?! I am learning to broaden my horizons and my palate thanks to this book.
review 2: Just got it from the Library. Made the tomatoe-bean soup last night and it was FANTASTIC! It was a rustic, Italian-style soup. Really easy to make, mostly stuff I had on hand. I have a lot of recipes flagged to try. Next up is the Quinoa Bread recipe, which is currently in the oven. Will update when I
... moretry it out. MMM, the bread was really good. I had to make it twice due to my first one turning out more like a flat bread. It was a pleasant surprise and had a vague taste, and density to it similar to wheat bread. less
