Bone Broth: excellent for digestion

We bought half a cow, and I requested the bones for broth. At the time I didn’t want to be wasteful and vaguely knew it was good for us, but now I understand how great.

I made broth by putting a bunch of bones in my crockpot with enough water to cover and cooking roughly 18 hrs. After that I sifted through it, separating the meat bits for soup and the fat blobs for the dogs and setting aside the bones for the garbage (I’d burn them for the garden, but I’m not in a good place for burning).

I strained the liquid and put the broth and tallow in a covered bowl in the fridge to chill. Later I scooped the tallow out and froze it for cooking.

I made French onion soup with the broth and onions I’d caramelized in the crockpot and frozen. Not only was it rich and delicious, I discovered I had more energy, my mood was upbeat and I slept better. Not only that, I didn’t have the sugar slump I’m used to after eating a cookie. I noticed that my sense of smell and night vision were also sharper, which was a welcome development.

I had soup on Christmas Eve, plus a no-bake cookie. I also had a cookie on Christmas, rationalizing that it was a holiday and I should celebrate. Normally, that would mean that three days later I’d be foggy, sinus draining, grumpy/sad and tired. Not this time! I sailed through, happily immune the slump.

Apparently, our guts really love gelatin, because it aids digestive function. For me, it definitely did, but I wouldn’t have noticed if I hadn’t done a forty day sugar fast and severely limited sugar.

This is a fad that seems rooted in fact, and boy, am I enthusiastic about it! My only question after this batch of broth runs out is to make it from scratch or to buy it premade? Not all meat comes with bones, but they can be bought separately from the butcher.

If I’m pinched for time, I might try a couple of brands I saw in my store recently, like Kitchen Accomplice or Epic (mostly because I love their meat bars), but there are lots of brands to choose from.

Whichever brand I chose, bone broth is definitely going to be on the menu. Anything that’s not only delicious, but makes me feel this good is a must have.
