Low Carb Broccoli Tot Sloppy Joe Casserole

Looking for a quick weekday dinner that you can throw together in 30 minutes? Then my “Low Carb Broccoli Tot Sloppy Joe Casserole is for you! It’s a delicious throwback and reminds me of something I would eat when I was a kid. Of course this version is healthier then what I ate as a kid, but equally as satisfying!

To make this recipe low carb I changed two things 1) substituted broccoli tots for tater tots and 2) substituted tomato sauce for ketchup.

If broccoli is not your thing you could also use cauliflower tots or zucchini tots. There are recipes for these all over the internet. Maybe I will make some homemade ones for the blog? Let me know if you would like to see that recipe!

I know that there will be some conversation around using the Green Giant Broccoli Tots for this recipe. In the big scheme of things I think you would be ok using this frozen option….especially if you are in a hurry. But, I would go with whatever you are comfortable with. I have made this recipe with both homemade and store-bought tots and it hasn’t affected my weight loss.

Low Carb Broccoli Tot Sloppy Joe Casserole

Ingredients

  • 2 pounds ground turkey
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 oz of tomato sauce (you may want more or less depending on how wet you want your sloppy joes)
  • 2 teaspoons Splenda brown sugar
  • 1/2 cup yellow mustard
  • Frozen broccoli tots (store bought or homemade)

Directions

  • Preheat oven to 425 degrees.
  • In a large oven-safe skillet (like cast iron), brown your ground turkey until cooked through.
  • Drain excess fat and water from the turkey. Return turkey to pan.
  • Season with salt and pepper, to taste.
  • Mix the tomato sauce, Splenda brown sugar, and mustard in the meat mixture. Let cook 2-3 minutes.
  • Flatten the meat mixture out into an even layer in the skillet.
  • Top with frozen broccoli tots.
  • Place skillet in the oven for 15 minutes.
  • For additional 5 minutes turn the broiler on to get the tots crispy. Keep an eye on them so they don’t burn.
  • Remove skillet from oven and allow to set for 5-10 minutes.
  • Serve with a side salad or other vegetable and enjoy!
  • Tips: To amp up the vegetables in the dish you could also add some to the meat mixture. I would try chopped broccoli, spinach, tomatoes, or zucchini.
