Moomin Biscuits

Feeling sad and low right now. I hate this time of the year – the first three months of the year are always low for me. All the Christmas and New Year’s hype is over, and I feel left with an emptiness that I know most people are.

I feel sad I’m not putting in all my energy into my conceptual artwork, and I miss it so much.
In the meantime, I decided to make some iced biscuits today, using a Moomnin cookie cutter my lovely Oli bought me for Christmas!

Ingredients (sorry not vegan):

100g caster sugar

275g plain flour

1 egg

100g butter

2-3 tsp honey

Pour the dry ingredients into the mixing bowl, and mix together. Then add the wet ingredients – egg and butter, and start mixing with a wooden spoon.
I found it a little difficult to get the ingredients to stick together, so I used my hands to scoop and mix instead. This worked to a certain extent, then I decided to add the honey, which helped bind it all together.

Preheat oven to 180*

Grease tins with butter and sprinkle plain flour and tap out excess.

Sprinkle some plain flour out onto your surface and roll the dough out so its about 0.5cm thick, and use your cookie cutter!
Lay cookies into prepared tin and bake for around 8 minutes. Biscuits will be ready when they’re a golden brown colour. Pop out and lay out to cool.

Mix icing sugar and water until you have the consistency you want, and cover them biscuits for all the sugary goodness!

(p.s my icing skills were pretty crap today, I barely had any icing sugar left)..
