Sweet and Sour Chicken – Jamie and Jimmy’s Friday Night Feast

After quite a long day yesterday, I wanted something like a takeaway, but with plenty of vegetables, and at not takeaway prices! That’s what a late night shift will do to you I guess. So my situation called for another Jamie Oliver recipe. This one was actually originally made by Jamie Oliver for Tom Daley as he also wanted a takeaway but a healthy one. This is a recipe I have wanted to try for a while now.

I actually find chopping veg quite relaxing, so this recipe was perfect for me, even if it did take a bit of time to get through it all. It’s also easier than it looks, so long as you spend the time getting everything ready first. Granted, most of your bowls will be dirty by the time you have finished, so this recipe would be even better if you have a dishwasher!

In terms of changes I made, I played around with what veg to use. A couple of packs of broccoli, asparagus, baby sweetcorn and mangetout were on offer so that sorted out the veg decision (I am a sucker for a bargain!). I also love a water chestnut, so they were definitely going in too. As for what I left out, the coriander was not going to make an appearance in my dinner. I just find it quite overpowering in light dishes like this.

A note of care: On the show that presented this recipe, Mr Oliver warned that this fish sauce smells like death. This is the understatement of the century; it smells like pure hell! If you drop it or spill it you will have to move house after throwing a match over your shoulder as you leave! But the discomfort of the smell in the preparation is worth the deliciousness of flavour when it’s finished (and the smell disappears on cooking too.) The sauce provides a subtle savoury undertone flavour, as long as it is used very carefully (because too much will make you loose your appetite for at least a month!)
