With a long hot summer forecast in New Zealand this year, we are going to need a few things to keep us cool. A favourite in our house is my Fruyo-Pop’s – they are, as their name suggests, frozen fruit and yoghurt ice blocks.
First, let’s start with the yoghurt. I recommend Gopala as it is delicious natural yoghurt made with non-homogenised milk and live cultures. No flavours , thickeners, preservatives or gelatin. It is also a great price – this week it was on special at Countdown for $2.50 for 750g!
Next, you will need frozen fruit. There are lots of options available at the supermarket. If I am using any fruit where you eat the skin, like berries, I buy organic or spray free. (you can afford to spend a little more when the yoghurt is so cheap!)
Now for the recipe:
- 2-3 cups fruit (It depends on how compact the fruit sits in the cup. Mango is chunky so 3 cups is recommended)
- 1 cup yoghurt
Put it in a blender/mixer with a blade to blitz until creamy.
Depending on the fruit, or your taste buds, you can add a tablespoon or 2 of honey. Remember when food is frozen you taste the sugar less than when it’s at room temperature. That’s why melted ice cream tastes extra sweet.
Once you have a smooth mixture, pour into iceblock moulds and put in the freezer for 4 hours or until frozen.
TIP: Get creative with your iceblocks to keep them interesting. You can add a few whole berries to the mixture as you are pouring, or layer different coloured mixtures.
When they are ready to eat, remove ice block from the plastic mould by dipping it in a glass of hot water, then gently pull the stick to remove it.

WARNING – Like magic, they will disappear very quickly so I recommend having 2 sets of moulds to keep them in stock!
