Rocky Road Cheesecake

Serves: 10 people

Despite already being on annual leave, I was politely asked by my first office (work) to bake something out of my second office (kitchen). I have worked all year, so I wasn’t going to miss our break up party, even if it was my day off!

Ingredient List

  • 2 cups biscuit crumbs (I used choc ripple)
  • 500g cream cheese softened
  • 1/2 cup desiccated coconut
  • 1/4 cup caster sugar
  • 1/4 cup peanut butter (I used crunchy)
  • 80g butter melted
  • 200g chocolate buttons
  • 1/2 cup cream
  • 2tbsp gelatine powder, dissolved into 1/4 cups boiling water, and then cooled
  • 2 cups marshmallows, halved
  • 1 cup Turkish delight, chopped

Method

  • Combine biscuit crumbs, coconut, peanut butter and butter in a small bowl.
  • 2. Line a spring form cake pan with baking paper and press mixture into the base and chill for 15 minutes.

    3. Place cream cheese and sugar in a bowl, beat well until mixed. Dissolve gelatine in the boiling water and let cool.

    4. Add chocolate melts, cream and gelatine to the mixture and combine well.

    5. Stir in marshmallows and Turkish delight and lightly mix.

    6. Pour mixture over the biscuit base and chill for 3 hours or until set.
