review 1: Revolutionary bread for the home cook. This method is the only one I've ever had success with. The book itself is well written, designed, and beautiful. The philosophy is to master a simple loaf first and then make subtle variations (rye, cheese, nuts, and even carrot juice before going into the unexpected but simple pizza and sandwich section where he carries over his minimalist philosophy). Perfecting the recipes in this book could take years--it took me 2 weeks for the basic loaf--but even mistakes are delicious. Essential for any cook, scientist, or human who has wondered "why isn't there a better way to bake bread?" Here it is and it is easy and amazing.

... moreut both books are gems in my library and well read. I will be working with this technique now for the Free Community Lunches at church once a month. I'll do the basic, the wheat and the olive breads. It will be one at a time because of the lack of experience, but I can't wait!The pizza recipes are not for me: they use thin, crisp crusts and bizarre toppings. Very New York. But I can vary a couple of the sandwich recipes. There is at the very end a "recipe" for bread crumbs. But with these breads crumbs, you can make a chocolate tart! Nom. Nom. less
