Breakfast Yogurt Crepes

Before you say it, these are easy!  Kind of like how you would make pancakes.  Besides, when else do you get to eat dessert for breakfast?!

Breakfast Yogurt Crepes

  • 2 Beaten eggs
  • 1 1/2 cups milk
  • 1 cup all purpose flour
  • 1 Tablespoon cooking oil
  • Yogurt (honey vanilla greek yogurt is our choice)

Beat eggs and combine eggs, milk, flour, oil and 1/4 teaspoon salt, beat till well mixed.  Heat a lightly greased 6 inch skillet; remove from heat.  Spoon in 2 Tablespoons batter; lift and tilt skillet to spread batter around bottom of pan.  Return to heat, brown on 1 side only.  Invert crepe onto paper towels; place crepe in a stack on another plate.  Repeat with remaining batter, greasing skillet occasionally.  We used a fairly new skillet.  Greasing after the first time was not necessary.  After making crepes, fill crepes with about 1 Tablespoon of Yogurt. Makes about 18 crepes.
We weren’t worried about the calories so we added some apple pie filling ontop of the yogurt.  A mouthwatering crepe bursting with flavor and can be eaten like a burrito on the go.  Great Breakfast.
