Fried brie, prosciutto & fig sandwich (#39)

Gosh, what a delight. This is a hungover Sunday morning meal for the gods. Cheese. Meat. Fried bread. Dream upon dream, joy upon joy. The route to happiness has opened before us.

I, probably like you, saw the fig in the recipe and originally thought ‘nah, I’m okay thanks’ but it’s a superb addition. You could easily get by without it, but I urge you not to.

Nigella’s At My Table – I first saw it on her TV show but then zoomed straight to the book – is what we can thank for this.

Good things: everything.

Bad things: I’ve had healthier things in my life. But fig is fruit, so it can’t be that bad, right?

Ingredients & requirements: for yourself

  • 2 slices of white bread
  • brie (make sure it’s out of the fridge so easily spreadable)
  • 1 fig
  • 2-3 slices of prosciutto
  • 4 teaspoons of unsalted butter
  • 1 teaspoon of vegetable oil

Preparation & cooking

  • Preparation:
  • Spread the brie onto the 2 slices of white bread
  • Season with some fresh ground pepper if you can
  • Slice the fig (not including the stalk) and arrange it on one slice of the bread
  • Arrange the 2-3 slices of prosciutto on the other slice
  • Assemble the sandwich by putting the two slices together
  • Heat 2 tablespoons of butter and 1/2 teaspoon of oil in a small-ish frying pan – put it on a medium heat, lowering slightly if it starts to burn. Once the butter’s foamy and melted, add the sandwich. Cook for around 3 mins.
  • Turnover, add another 2 tablespoons of butter and 1/2 teaspoon of oil and then cook for another 2 mins.
  • Put it on a plate, cut in half, and enjoy to your heart’s content.

    Most Friday’s now I make sure I have the 4 key ingredients in the house for a hungover Saturday or Sunday morning. Brie, bread, fig and prosciutto. Bosh, done.

    As you can see, it’s really not more than 7-8 mins to do. I made it for my mama and nana on Christmas Eve, and they absolutely loved it. I was listening to our beloved Mary Berry last night, and she was talking about the easiest way to make great food is to make it a bit a different. This recipes does that easily.
