My Favourite Pancake Recipe

I’ve always been a lover of pancakes. I love making up a big batch of pancakes and all sitting down together to enjoy breakfast, a meal which is rushed by so many. Thats why they are the perfect weekend breakfast (or just the perfect breakfast actually). When topped with fruit and honey, they are sweet, delicious and set you up for the day perfectly.

I have tried so many recipes and so many different styles, but recently I’ve discovered Jamie Oliver’s recipe and it really has changed the pancake game. He takes fluffy pancakes to a WHOLE NEW LEVEL (just try it you’ll see!). The secret is whisking the egg whites until they are meringue standard and then folding the rest of the mix into the egg whites (Jamie you genius!). You can find the recipe here, or if not just keep on reading!

You will need:

3 large free-range eggs

115 g plain flour

1 heaped teaspoon baking powder

140 ml milk

Method:

Separate the eggs whites into one bowl and the yolks into another.

Add the flour, baking powder and milk into the egg yolks and mix until smooth.

Whisk the egg whites until they form stiff peaks (or until you can hold the bowl upside down over your head without it falling out but thats perhaps the more risky option).

Fold the batter into the egg whites.

Heat a non-stick pan over a medium heat and spoon the batter into the pan. The mixture should still be thick and firm from the egg whites so the pancakes are unlikely to spread in the pan, don’t push them down as this is what makes them super light and fluffy!

Once bubbles begin to appear, flip the pancake and continue cooking until both sides are golden.

Serve with your choice of toppings. My ultimate pancake favourite is raspberries with either honey or white chocolate.
