The Minister is rather partial to cake, who isn’t? She was therefore intrigued to learn about another Invisible University, the Professional University of Desserts, which has a distinctive specialism in specialist cakes, pastries, puddings and other deserts.
Despite its very low profile, PUD has successfully recruited talented chefs, bakers and dessert theorists from around the world and has an enviable record in producing talented graduates and novel dessert-based research.
The institution has been extremely successful in capitalising on the UK trend for dessert cafes and many of the more recent developments in this market have been inspired and led by PUD alumni.
This is undoubtedly a university with a future as demand for desserts, cakes and pastries and constant innovation in all parts of the pudding market shows no sign of declining. Whilst there are many catering colleges around the country producing chefs of one kind or another, PUD is unique in developing graduates who really are at the leading edge of dessert technology, theory and practice. It’s a reasonable assumption that any novel cake or pudding based innovation that you have experienced in recent years owes its origins to the work of PUD or one of its graduates.
