Pumpkin Challenge 2017: Days 16 – 20

Each year, I endeavor to consume one pumpkin thing per day for the month of October. This is my 7th annual Pumpkin Challenge – welcome!

Day 16: Pumpkin Cheerios, Cheerios

My eyes LIT up when I saw these at the grocery store! They are made with real pumpkin and tasted like it, too! They definitely made a simple breakfast much spicier.

If you can find these in your grocery store, I would definitely recommend grabbing them! Before they’re gone.

Day 17: Pumpkin Raisin Muffins, Unknown

These muffins turned out really well! My only regret being that I neglected to add a sweet ingredient because they had a very neutral taste with great pumpkin flavour. However, I am proud that, finally, a vegan muffin recipe turned out with great texture!

Day 18: Pumpkin Macarons, Local grocer

Macarons are one of my favourite little treats because a) I love bite-sized foods and b) they have a fun texture. So, to have the added pleasure of including them in my pumpkin adventures makes them extra-special.

Day 19: Pumpkin Cinnamon Bun, Grounds for Coffee (Vancouver)

C.G. is so kind that he agreed to answer my pleas for someone to mail me a pumpkin cinnamon bun from Grounds for Coffee! It survived its trip in the mail and tasted delicious and mildly pumpkiny after we warmed it up for breakfast.

You simply must try these goodies (pumpkin-infused or not) when you are in Vancouver.

Day 20: Pumpkin Pie Ice Cream, Sweet Jesus

If you’ve ever tried any Sweet Jesus treats, you know that this one was going to be good, too.

This seasonal spicy flavour included pumpkin soft-serve and graham-cracker covering with a dollop of whipped cream. It truly tasted like a pumpkin pie! This was the baby size, but it was incredibly filling (and definitely not dairy-free, unfortunately).

We’re almost there!
