Skinny Chocolate Chip Banana Muffins

We all love to have something that tastes and looks bad for you but is actually healthy. Thats what these muffins are looks and taste bad but are quite healthy its doesn’t get any better then that. These muffins are great for the kids lunch box as a treat or a breakfast snack that you can grab on the way out the door or if you are to busy to spend sometime every morning to make breakfast.

Ingredients:
  • 1 cup All Purpose flour
  • 1 Teaspoon Baking Soda
  • 1/4 teaspoons Salt
  • 3 Bananas mashed
  • 1 Tablespoon Vanilla
  • 4 Tablespoons Honey
  • 1 Tablespoon Olive Oil
  • 1 Large Egg
  • 1/2 Cups Greek Natural Yoghurt
  • 1 Tablespoon Milk
  • 1/2 Chocolate Chips

 

Instructions
  • Preheat Ovan to 180° C & Spray a 12 cup muffin tin with oil.
  • In a bowl whisk dry ingredients: flour, baking soda & salt.
  • In a large bowl mash bananas, add honey, oil, vanilla, milk, yoghurt & egg. Mix until well combines & smooth.
  • Add dry ingredients until just combines
  • Fold in Chocolate Chips
  • Fill muffin tin & bake for 20-25 minutes. Test to see if they are cooked all the way though by sticking a skewer or something pointy into the centre of the muffin and if it comes out clean its cooked.

    You can make these into mini muffins if you prefer. Just change the cooking time to 14-16 minutes.
