review 1: Cook's Illustrated and America's Test Kitchen have a knack for writing recipes that I actually read and remember. Their ability to explain the crazy voodoo of food science astounds me, and finally published a cookbook focusing on the science! It's a great gift for someone who likes cooking, but hates cookbooks and wants to improve their cooking skills forever (by figuring out the 'why' of recipes, along with 'how').
