SUMMER BERRY SUPERFOOD SALAD 2 servings, Cook time: 15 minutes, Total time: 20 minutes
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 small avocado, sliced
- 1/4 cup uncooked quinoa (cooking the quinoa will make 1 cup cooked)
- 3 cups cruciferous crunch*
- 5 cups mixed greens
- 2 tablespoons olive oil
- drizzle of aged balsamic vinegar*
- salt and pepper to taste
INSTRUCTIONS
1 serving, Prep time: 5 minutes
INGREDIENTS- 1/3 cup papaya (about 1/2 a small papaya)
- 1/2 cup frozen pineapple chunks (about 5)
- 1 frozen banana
- 2 handfuls of spinach
- 1 cup almond milk (Califia Farms is my favorite)
- 1 teaspoon coconut oil
INSTRUCTIONS
*Note: For a sweeter smoothie, use less spinach.
