Low protein waffles with peach syrup

 

1 cup Loprofin baking mix

1 tsp baking powder

1 scoop LP Drink Milupa (optional)

dash of salt

1 tbsp sugar

1 drop vanilla extract

1 tbsp vegetable oil

water

3 ripe peaches

1/2 cup sugar

 

In a mixing bowl combine baking mix, baking powder (you can add some egg replacer too if you want but this is optional), lp drink mix, salt, sugar, vanilla, oil and enough water to make thick runny dough like for pancakes. Tip – use a blender or bullet-type mixer to mix – this will eliminate all the clumps.

Pre-heat your waffle maker, then spoon the batter covering the waffle section about 2/3 full, close and cook according to your waffle maker instructions. Use a fork to carefully lift the waffle from the waffle maker and transfer it to the plate. Continue untill all batter is used up.

 

To prepare the syrup cut up ripe peaches into bite size peaces (frozen peaches work too), cover with sugar in a small saucepan and simemr on medium-low heat, stirring constantly untill peaches release their juice. No need to add any water. Continue stirring and cooking for about 5-10min untill fruit softens up, taking care not to foam up the syrup too much. Remove excess foam with a teaspoon (and eat it immediately because it is amazing). Remove the saucepan from heat and let it cool down to room temperature. Spoon the syrup over the waffles and serve. Store leftover syrup in refrigerator.

Pro tip: add finely grated carrot to the batter in order to get your toddler to eat more veggies!
