Victoria sponge cupcakes

These cupcakes 15mins to make and 15-20mins to bake. Ingredients:   (to make 12)
  • 90g of self raising flour.
  • 90g of castor sugar.
  • 90g of soft margarine.
  • 2 eggs.
  • 1/2 tsp of vanilla extract.
  • 3 tbsp of jam.
  • 10g of icing sugar.
  • Some icing of your choice.
  • Method:
    • Pre-heat the oven to 190degrees or 170degrees fan.
    • Line a cupcake tin with paper cases.
    • Sift the flour into a large bowl.
    • Add the sugar, margarine and vanilla.
    • Break the eggs into the flour.
    • Mix until smooth and creamy.
    • Put 1 tsp of the batter in each cupcake case.
    • Bake for 5mins or until springy to the touch.
    • Take the cupcake tray out of the oven and cool for 5mins.
    • Whilst the cakes are cooling, put 2tbsp of jam in a small bowl and mix until smooth.
    • Put a tsp of jam in the centre of each cupcake case.
    • Surround the jam with the remaining batter.
    • Place in the oven and allow to bake for 15mins.
    • Whilst the cupcakes are in the oven, take the remaining jam and the icing sugar and mix until smooth.
    • Add a splash of water.
    • When the cakes are still hot drizzle the jam mix over the cupcake.
    • Allow to cool.
    • Ice however you like.
    • Enjoy!!
