RECIPE: Princesstarta

For my birthday last week I baked myself my favourite cake, which is a “Princesstarta”. Unfortunately it is not available in a regular bakery here in Austria, but you can get it at IKEA. If you are searching for a birthday cake, you have to try this one!

Ingredients:

For the buiscuit:

  • 4 eggs
  • 120g sugar
  • 120g flour
  • a pinch of salt
  • 1 tsp. vanilla sugar
  • 25g butter, melted

For the cream and filling

  • 500ml milk
  • 1 vanilla pod
  • 1 egg
  • 1 egg white
  • 100g sugar
  • 3og cornflour
  • 1/2 tsp. salt
  • 25g butter
  • 600g cream
  • 2 tbsp. icing sugar
  • 150g raspberry jam
  • 200g green marzipan

 

1.For the buiscuit: Preheat your oven to 180C°. Prepare a 20cm round tin with some parchment paper. In a bowl, mix the eggs with the sugar until it is pale, fluffy and doubled in size. In another bowl mix the flour, salt and the vanilla sugar. Siff the flour over the egg mixture and fold it in carefully without knocking out the air. Fill the mixture in your baking tin and bake for 20 minutes. After it finished baking, let it cool down and then cut it into three layers.

2.For the creams and filings: In a bowl mix the egg, egg white, sugar and cornflour. In a pot heat the milk and the inside of the vanilla pod until it is nearly boiling. Slowly add some of the milk to the egg mixture and mix really well, then add the egg mixture and let it boil until the mixture has thickened up. Let it cool completely.

3. Whisk the cream until it is stiff. Mix 1/3 with the cream you cooked. Take the first layer of the cake, spread half of raspberry jam on the layer, then add half of the vanilla cream, another layer, the remaining raspberry jam, the remaining vanilla cream on top and finish with the last layer of cake. Then add the cream on top and make it smooth.

4.Roll out the green marzipan with some icing sugar and put it on top of the cake. If you have some cracks in there try to put some water on top and fix it.
