Hey guys,
This is a recipe for those with a sweet tooth and not for people watching their calorie intake. It’s my first time making Rocky Road and hence the name “Rustic Rocky Road” as in my view it looks scrummy, but I don’t know if Mary Berry would approve.
I have a vague memory of my mum attempting to make Rocky Road when I was child and again, like all cooking in my family it was rustic but so addictive to eat. Sadly, my mum baking is far and few in between. I don’t know why I have never attempted to make this before but it’s so easy and I will definitely be making it again in the future (possibly for the baby shower??)
Ingredients:
* 300g dark chocolate
*125g butter
*3 tbsps golden syrup
*200g rich tea biscuits
*100g Mini marshmallows (I didn’t have enough marshmallows, so I added silver balls but you could probably add whatever you wanted)
Method:
1. Grab a ziplock freezer bag, pop your rich tea biscuits inside and seal. Smash to pieces with a rolling-pin. You want a mixture of crumbs and pieces of biscuit still.
2. In a large pan, add butter, chocolate and golden syrup. Head on the hob until melted together. Keep stirring to ensure the chocolate doesn’t catch and burn.
3. When melted, add biscuits & marshmallows/silver balls/whatever you are adding to the chocolate mix and stir to combine
4. Grab a square baking tray or any size tray you can find. Cover it in foil.
5. Add the chocolate mix and smooth until evenly spread out.
6. Place in the fridge for a minimum of two hours or until hard.
7. Cut into pieces and serve.
